Nadai Fujisoba Ni-Hachi, Japan’s number one soba restaurant is having a weekend soba promotion, focusing on its warm soba. The enticing fragrance of the warm soba’s tsuyu (noodle soup base) comes from the dried bonito flakes and kaeshi (concentrated soup base). To create the kaeshi, sugar and mirin are added to the soy sauce, and the mixture is left to mature for a week. Nadai Fujisoba Ni-Hachi offers two kaeshi versions: black and white. The black version is a special formula of the restaurant, made with black soy sauce. The white kaeshi is made with white soy sauce base and has a richer note.
Lauded as a soba specialist, the restaurant makes its noodles in store every day to ensure absolute freshness. “Ni-Hachi” means “2:8 ratio”, which is the golden combination of wheat flour (20%) and buckwheat flour (80%) needed to make the perfect soba.
